I have seen lots of these cupcake cake pops online, but this was my first time making them. They weren't any harder then making regular cake pops, just required a couple extra steps. I think they were originally done by Bakerella here. To make them a little bit more fun I used striped paper straws instead of lollipop sticks. You can follow the steps below to learn how to make them.
Mix your cake and frosting like you would with any other cake pop recipe, you can find instructions here. Once you have rolled the cake into balls use a small sized flower shaped cookie cutter to shape the bottom of the cupcake.
Round the top of the cupcake while the cookie cutter is still on the bottom. Then slide the cookie cutter off of the cupcake and set aside until all of the balls are shaped like cupcakes.
Next melt your chocolate candy coating and dip the bottom half of the cupcake in the chocolate.
Once all of the cupcakes are covered in chocolate on the bottom half you can place them on a tray. I used the tray that comes with the Baby Cakes Cake Pop Machine, and I love it because it has little round holes for each cake pop to sit in. It helps keep the round shape on top.
Next you will insert the paper straws into the center of each cupcake, dipping the tip in chocolate before inserting. Then place them into the freezer to set for about 5-10 minutes. This will help keep the straw in the cake pop while you dip the tops.
Once the straws are set you can melt the white chocolate candy coating and color it pink or whatever color you decide to use. To keep the chocolate from getting too thick I add a small amount of shortening to help it go on smooth.
While the pink chocolate is still wet sprinkle with jimmies and top with an m&m candy or I used pink jelly beans because that was all I had! Stick the straws in a piece of Styrofoam covered in plastic wrap to hold the cake pops in place. Set in the freezer again for 5-10 minutes then you can transfer to a Tupperware container and store at room temperature on in the refrigerator for 2-3 days.
They turned out great. I've been wanting to try making them too, just haven't had the time. Love that you used the cute straws instead of lolli sticks!
