Gluten Free Pancakes

This recipe is an SCD recipe that is also Gluten free. It is from nomorecrohns.com and you can find it in their breakfast section here. They are called Jim's Fluffy Pancakes, however mine don't come out all that fluffy...It might be time to replace my baking soda! They are still really yummy! They have a great flavor and you can top them with honey or we sometimes spread them with peanut butter. Or just eat them plain because they taste so good without anything on top.



Ingredients:
  • 1 1/4 cup almond flour
  • 4 medium eggs
  • 4 Tablespoons honey
  • 2 Tablespoons vanilla (containing vanilla and alcohol only)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 Tablespoon real butter melted, plus more to butter the griddle
Mix all of the ingredients together in a blender and pour batter onto a buttered electric griddle set at 275 degrees or a buttered pan. (I usually have to set my griddle at a higher temperature, but that might just be because it is really old.) Cook slowly until golden brown; you cook them longer then you would regular flour pancakes. Serve with warmed honey and fresh fruit...or peanut butter!

*The batter will be thin, but if it comes out too thin because your eggs were large, then just add a little more almond flour to thicken it.
